Turkey Chorizo

  • 1lb. 85/15 ground turkey 
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 3 tsp smoked paprika
  • 3 tsp chipotle pepper, ground
  • 2 tsp garlic
  • 1 tsp oregano
  • 1 tsp white vinegar
  1. Mix all the dry spices and add to a large bowl with the ground turkey.  
  2. Once all the seasoning has been absorbed by the meat and is well mixed, add the vinegar and allow to marinate for 12-24 hours.
  3. Pre-heat the REC TEC Matador and cook until the turkey has reached an internal temp. of 165℉.




This recipe is also great to use with ground beef, pork, and chicken cooked in bulk.

    If you're not a fan of pork or beef sausage, this is a dish for you! This tastes almost exactly like regular chorizo, and I love adding it to some tortillas for tacos every once in awhile.
