Smoked Crab Pies

Ingredients:

  • 2 tbsp butter
  • 2 tbsp olive oil
  • 2 cups onion, chopped
  • 2 cups celery, diced
  • 1.5lbs. raw shrimp, chopped with tails removed
  • 1/4 cup tomato paste
  • 2 tbsp flour
  • 1 tbsp cognac
  • 2 cups seafood stock
  • 1.5 cups heavy cream
  • 3 cloves garlic, crushed
  • 1/2 tsp salt
  • 3.5 tsp REC TEC Grills Durty Gurl Bloody Mary Rub
  • 1 tsp hot sauce
  • 1/2 tsp Worcestershire sauce
  • 8oz crab meat, cooked

Mashed Potatoes:

  • 5-6 large potatoes, peeled and cubed
  • 6-8 cups water
  • 4 tbsp butter
  • 1/2 cup heavy cream
  • 1 tsp REC TEC Grills Durty Gurl Bloody Mary Rub
  • 2 cups white cheddar, shredded

Instructions:

  • Pre-heat REC TEC Grill to 350°F.
  • Place 2 tbsp of butter, olive oil, onions and celery in a large saucepan and cook for 5 minutes until tender.
  • Add garlic and cook for 1 minute.
  • Add tomato paste and cook for 1-2 minutes.
  • Add flour and stir constantly for 2 minutes.
  • Slowly pour in seafood stock and cognac and.
  • Lower heat to 300°F and simmer for 30 minutes.
  • Bring heat back up to 350°F and stir in 1.5 cups heavy cream.
  • Bring heat down to 275°F and let mixture boil for 15 minutes.
  • Add Worcestershire sauce, hot sauce, salt, shrimp, crab, and Durty Gurl rub and set aside.
  • Bring 6-8 cups of water to a boil.
  • Add potatoes and cook 10-15 minutes until tender.
  • Drain water.
  • Pre-heat REC TEC Grill to 350°F.
  • Place seafood filling into a 3 quart baking dish and top with potatoes.
  • Top potatoes with cheese and bake for 25-30 minutes.
