Pulled Pork

Ingredients:

  • 1 x 8-9lb. pork shoulder
  • Yellow mustard
  • 1 tbsp molasses

Rub:

  • 1/2 cup kosher salt
  • 1/2 cup paprika
  • 1/2 cup chili powder
  • 1/2 cup brown sugar
  • 2 tsp celery seed
  • 4 tsp black pepper
  • 2 tsp ancho chili pepper
  • 4 tsp ground mustard
  • 2 tsp cumin
  • 3 tbsp garlic powder
  • 3 tbsp onion powder

Mop:

  • 2 cups vegetable oil
  • 2 cups apple cider vinegar
  • 4 cups of apple juice
  • 2 tbsp Worcestershire sauce
  • 2 tbsp soy sauce

Carolina Style BBQ Sauce:

  • 1 cup apple cider vinegar
  • 2 tbsp blackstrap molasses
  • 1 tbsp ground mustard
  • 1/2 cup butter
  • 1/2 tsp cayenne pepper

Instructions:

  • Cover the pork shoulder with mustard and molasses mixture.
  • Mix ingredients for rub.
  • Cover shoulder generously with rub.
  • Heat REC TEC to 225ºF and place on grill.
  • Brush with mop every hour..
  • Cook until internal temperature reaches 195-200ºF (meat should pull apart).
  • Mix ingredients for Carolina BBQ sauce and serve alongside pulled pork.
