Prosciutto Stuffed Chicken

  • 4 chicken breasts, boneless and skinless 
  • 8 slices prosciutto ham
  • 4 slices provolone cheese 
  • 8 fresh basil leaves
  • 2oz sun-dried tomatoes, sliced
  • 2 tbsp REC TEC Grills Colden's Freakin' Greek Rub
  • 2 tbsp olive oil
  1. Preheat REC TEC grill to 450°F.
  2. On a cutting board, layer 2 slices of prosciutto ham, top with a slice of provolone, 2 leaves of basil, and a few slices of sun-dried tomato.
  3. Roll tightly into a cigar shape.
  4. On a cutting board, using a thin tipped boning or paring knife, insert the knife into the thickest part of the breast to create a pocket, being careful not to cut completely through the meat.
  5. Insert a prosciutto ham cigar into the breast pocket.
  6. Rub each breast with olive oil and season with Colden's Freakin' Greek Rub. 
  7. Grill for 6-8 minutes each side until an internal temperature of 165°F is reached.  


When checking the temperature of the breast, make sure you are checking the meat, and not the molten cheese.
