Maple Pecan Spatchcock Turkey

  • 16lb. whole turkey
  • 1lb. butter
  • 1 cup pecans, chopped
  • 2 tbsp rosemary, chopped
  • 1 tbsp thyme chopped
  • 1/2 cup pure maple syrup
  • 2 tbsp REC TEC Grills Colden's Freakin' Greek Rub 
  1. Pre-heat REC TEC Grill to 325‚Ñâ.
  2. Spatchcock and trim any excess fat off the turkey and pull the skin away from the meat (this will allow for seasoning below the skin).
  3. Combine the soft butter with pecans, rosemary, thyme, and maple syrup.
  4. Stuff the pecan butter under the skin over the breasts, legs, and thighs of the turkey.
  5. Rub any excess butter over the top of the skin.
  6. Season the turkey with Colden's Freakin' Greek Rub.
  7. Cook until an internal temperature of 165‚Äö√ë√¢, for about 8-10 minutes per pound.

    It is one thing to cook a turkey that is perfectly juicy but it is far more difficult to cook one that doesn’t just taste like bland turkey. This recipe does both! The maple pecan compound butter basted the meat throughout the cook making it perfectly moist and then provides an explosion of flavor with each bite. Crazy good!!’
