Homemade Turkey Chorizo
- 1lb. 85/15 ground turkey
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp kosher salt
- 1 tsp black pepper
- 3 tsp smoked paprika
- 3 tsp chipotle pepper, ground
- 2 tsp garlic
- 1 tsp oregano
- 1 tsp white vinegar
- Mix all the dry spices and add to a large bowl with the ground turkey.
- Once all the seasoning has been absorbed by the meat and is well mixed, add the vinegar and allow to marinate for 12-24 hours.
- Pre-heat the REC TEC Matador and cook until the turkey has reached an internal temp. of 165℉.
This recipe is also great to use with ground beef, pork, and chicken cooked in bulk.
