Guinness Bacon Brownies with Irish Cream Cheese Icing

  • 1.5 cups sugar
  • 2/3 cup brown sugar
  • 1 tsp salt
  • 3/4 cup cocoa powder
  • 3/4 cup dark cocoa powder
  • 3/4 cup all-purpose flour
  • 3 eggs
  • 2 tsp vanilla
  • 1.5 sticks butter, melted
  • 1 cup Guinness Stout
  • 6 slices of bacon
  • 1 cup semi-sweet chocolate chips
  • 4oz cream cheese
  • 1/2 cup powdered sugar
  • 1/2 stick butter
  • 1/2 cup Baileys Irish Cream liqueur
  1. Pre-heat REC TEC grill to 350ºF.
  2. Cook bacon in a 12" cast-iron pan.
  3. Reserve bacon fat and coat all sides of the pan with the bacon fat.
  4. After bacon cools, tear bacon into small pieces.
  5. In a bowl, combine the sugar, brown sugar, salt, cocoa powder, dark cocoa powder, flour, eggs, vanilla, butter, Guinness, chocolate chips, and bacon pieces.
  6. Mix ingredients with a whisk until they are fully incorporated.
  7. Pour batter into the cast-iron pan with the reserved bacon fat.
  8. Cook brownies at 350ºF for approximately 35 minutes; check doneness with a toothpick.
  9. Combine all ingredients for the icing, whisking until incorporated and smooth.
  10. Drizzle icing over brownies.
  11. Serve warm with your favorite ice cream.

    These brownies are rich and delicious. I found Valrhona dark chocolate cocoa powder at Whole Foods, as I wasn't able to find dark cocoa powder in the baking section. Ours took a bit longer to cook (an extra 15 minutes), and I had to add powdered sugar to get a good consistency on the icing. People thought the bacon pieces gave them a strange texture, as if there were raisins in there, but the idea that there's bacon in the brownies was a total crowd pleaser.
