Chipotle Citrus Marmalade

  • 6 navel oranges
  • 3 cups sugar
  • 2 lemons, zested and juiced
  • 2 chipotle peppers
  • 4 cups water
  1. Pre-heat REC TEC to 350‚Ñâ.
  2. Wash and slice oranges very thinly, removing seeds.  
  3. Cut in quarters.
  4. Add to a large, cast enamel pan on smoker and cook for 30-45 minutes until softened.
  5. Add 4 cups of water and allow to come to a simmer.
  6. Add the sugar, lemon juice and zest, then continue cooking until the mixture thickens and has an internal temp. of 223‚Ñâ (about 1.5 hours).
  7. Allow the orange mixture to cool prior to placing in the fridge.


Best served with fresh biscuits.

    This is one of the most pleasantly unusual dishes I've ever had. Love this smeared on some biscuits for breakfast, and I always try to keep a jar in my fridge for friends and family to try.
