  • Boneless chicken breasts
  • Poblano peppers
  • Shredded pepper jack cheese
  • Shredded cheddar cheese
  • Thinly sliced bacon
  • REC TEC Grills Ray's Front Row Master Blend
  • REC TEC Gourmet BBQ Sauce
  1. Pre-heat REC TEC grill to 375ºF.
  2. Butterfly chicken breast and pound out evenly to 1/4" thick.
  3. Season with Ray's Front Row Master Blend.
  4. Slice poblano peppers evenly into 2" chunks.
  5. Roll up chicken breast with peppers and cheese.
  6. Wrap tightly with 2-3 slices of bacon.
  7. Apply Ray's Front Row Master Blend to outside.
  8. Cook until the chicken reaches an internal temperature of 165°F (approximately 25-30 minutes).
  9. Apply thin coat of BBQ sauce for last 15 minutes of cook time.

    Delicious recipe! We did not use the BBQ rub or sauce...chose to keep it more simple. Chicken had great flavor and bacon was a plus! We put chopped jalepenos and jalepenos havarti in the chic breast. Bacon kept it falovorful and moist.

    Just tried out your recipe on my smoker and wow those were a hit in my house. I did mine without BBQ sauce because they looked delish without, but I am sure it would be great either way. Cooked on a mesh bakers rack which helped. Mine were done in 45 mins so I would watch internal temp to 165.
