  • 10lb. whole capon
  • 1/2lb. butter
  • 2 tbsp REC TEC Grills Ben's Heffer Dust
  • 3 tbsp REC TEC Grills Colden's Freakin' Greek
  • 1 tbsp sea salt
  1. Dry the capon very well and season the bird with sea salt all over, then allow to sit in the fridge overnight uncovered.
  2. Mix softened butter with 2 tbsp Ben's Heffer Dust and 2 tbsp of Colden's Freakin' Greek Rub.
  3. Add the compound butter underneath the skin of the capon and reserve 2 tbsp to smear on top of the skin.
  4. Season the outside of the capon with the 1 tbsp Colden's Freakin' Greek Rub.
  5. Cook at 325‚Ñâ degrees until an internal temp. of 165‚Ñâ is reached in the breast.

    I used this basic recipe to cook 6 boneless, skinless chicken breasts and it was fantastic. I made a paste with the butter, Hefner dust and the Freakin’ Greek and coated the breasts with it.
    When I put them on the grill I sprinkled Freakin’ Greek mix on top.
    When the internal temp reached about 100 I flipped the breasts and basted them again with the butter mix and sprinkled them again with the Freakin’ Greek mix.
    When they reached 165 I pulled them off the grill and served them.
    Fantastic!! You can’t go wrong with this basic recipe.

    A Capon is a castrated rooster (Kind of like a Steer in Cattle). As a teenager I showed Capons at the Houston Livestock Show. They grow bigger than normal size fryers. Enjoy.
