Brine for Corning Beef

Ingredients:

  • 5-6 lb. brisket flat
  • 4 tsp pink curing salt
  • 2 onions, diced
  • 2 ribs celery, chopped
  • 3 carrots, chopped
  • 1.5 cups kosher salt
  • 1/2 cup sugar
  • 5 tbsp pickling spice
  • 6 cloves garlic
  • 2 gal water
  • 5lbs. ice

Pickling Spice:

  • 2 tbsp cloves
  • 2 tbsp black peppercorn
  • 2 tbsp mustard seeds
  • 2 tbsp coriander seed
  • 2 tbsp red pepper flakes
  • 1 tbsp mace
  • 1 tbsp ginger
  • 1 cinnamon stick, crushed
  • 3 bay leaves, crushed

Instructions:

  • Prepare prickling spice by adding all ingredients to a spice grinder and pulsing.
  • Combine remaining ingredients except brisket in a large pot, simmer for 10 minutes.
  • Remove from heat and add ice, allow mixture to cool completely.
  • Add brisket and allow to brine for 5-7 days.
  • After about a week, remove from brine, rinse, and dry well.
