Soup, Chili, and Game Day

Football season is here! 

With the approach of fall and football season in full swing, it's time to cook some of those warm-you-up dishes for all your game day parties. Watch parties have become as much a tradition as the games themselves! A lot of people turn to the basics on game day: Burgers, hot dogs, and wings. But, I have a few items that have become my go-to cooks when preparing for the big game.

My Take on Chili

As the air gets a little cooler, there is absolutely nothing better than a big pot of chili. 

Well, I used to think that... Now, I love a new twist on chili that my family cooks at least a half-dozen times during football season. We turn our pot of chili into Chili Pie. All of my family and friends go nuts for this dish! I use the RT-G450 Matador and my  RT-700 to complete this delicious meal. First, I mix up some mouth-watering chili and let it simmer for about an hour on the Matador. Then, I set the RT-700 to 425ºF and get 4-5 pie crusts warming (store bought pre-made crusts work just fine). I let them start to brown up slightly and pull them out of the grill to add the chili and a nice thick layer of shredded cheese on top. Then, I place them back on the grill for 15-18 minutes to get that layer of cheese melted to perfection. Once it rests for 15 minutes to thicken up, I cut it into pie slices. Add a dollop of sour cream and a few jalapeños, and you have yourself a game day meal that will make the entire parking lot jealous!

Smoked Chicken & Chickpea Soup

For this recipe, I have used both the RT-G450 Matador and the RT-B380 Bullseye (both of which will be re-released later this year). In an attempt at full disclosure, I stole this recipe from Chef Greg. The beauty of this dish is that it tastes amazing and it's a totally healthy choice! It seems everyone stuffs themselves when they go to a game day party. But with this dish, you can enjoy something delicious without feeling guilty. I have attached the recipe and, as you can see, it is loaded with fresh and healthy ingredients. The first time I made this, I wondered how my kids would like it. Well, let’s just say I did not get a second helping... I will not make the rookie mistake of only preparing one small pot next time. That's another great aspect of this soup - you can prepare several batches and throw some in the fridge, or even the freezer, to eat at a later date. All the ingredients marry together creating an amazing, savory flavor that will blow your guests away.
