  • 2 venison backstraps, cleaned 
  • 1lb. bacon (thin)
  • 3 tbsp REC TEC Grills Ray's Front Row Master Blend
  1. Pre-heat REC TEC Grill to 350‚Ñâ.
  2. Trim the backstop of excess fat and silver skin, then cut into 1.5 inch thick medallions.
  3. Season each medallion with Ray's Front Row Master blend.
  4. Line 2 strips of bacon on a cutting board, wrap up the medallion, and place on a cooking mat.
  5. Repeat for the remaining medallions.
  6. Cook for 30-35 minutes until the medallions register 135‚Ñâ and the bacon is crisp.

    1st time to ever grill venison. yum. Cooked for about 35 minutes. Internal temp was 135+ but bacon wasn't crisp. Took bacon off and ate the venison. So tender and moist. It definitely is a keeper. Thanks Rec Tec

    This is always my go-to dear (venison) recipe. It goes great with my Stampede pellet grill!
