Bacon Wrapped Pork Tenderloin

  • Pork tenderloin(s)
  • Thinly sliced bacon
  • REC TEC Grills Rossarooski's Honey Rib Rub
  1. Set REC TEC to 375ºF. 
  2. Unpack and trim the pork tenderloins as desired.
  3. Rub the tenderloin(s) with Rossarooski's Honey Rib Rub.
  4. Cut your bacon so the slices wrap around the tenderloin with just a little overlap; you want the bacon to render.
  5. Use toothpicks to hold the bacon wraps in place. 
  6. Place on your REC TEC grill and cook until the internal temp. is 145ºF; 160ºF is well done.
  7. Pull the meat off, tent with foil, and let it rest for 15-30 minutes.
  8. Slice about 1/2" thick.

    I rubbed the outside with half spicy brown mustard and half molasses. Used Ron’s screaming pig rub on top of that. Then wrapped in bacon. I cooked mine at 225 not 375 until it reached 145 internal. Let it rest and served. It was amazing.

    Great! Is 375* correct? Cooked mine at 225 until intetnal temp was 145-155. Tender and delicious

    Made this this evening for my father and it was perfect. Rubbed with Twisted Q Garlic rub and it was the best pork loin I have ever had.

    Tried out this recipe. Came out good. Might inject a bit of apple juice next time.
