I just made these and they were awesome. I de-seeded the jalapeño and I doubled the sausage. I made the meatballs about 2.5 - 3 inches in size. It took 2 pieces of bacon to wrap them and I made 10 meatballs. This is going into the keeper pile.

I didn't mix before hand, i just made the hollow sausage ball then added chopped jalapenos added 2 small cubes of moneray jack and a half teaspoon of cream cheese then closed the balls, wrapped with 1 slice of thick cut bacon.
They came out awesome
