Bacon Meatloaf with Sriracha Bourbon Ketchup

  • 2lbs. 80/20 ground beef
  • 2 eggs
  • 1 large sweet onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 2 cloves garlic, finely chopped
  • 1.5 cups dried bread crumbs
  • 1/4 cup Worcestershire sauce
  • 1 cup milk
  • 1 tbsp mustard powder
  • 1 tsp dried thyme
  • 2 tsp salt 
  • 2 tsp black pepper
  • 16oz thick cut bacon
Sriracha Bourbon Ketchup:
  • 1 cup ketchup
  • 2 tbsp bourbon
  • 2 tbsp Sriracha or to taste
  • 1 tbsp brown sugar
  1. Start by finely chopping the onion, bell pepper, and garlic, and sauté with a little olive oil until the onions are soft and translucent (10-15 minutes).
  2. Remove from heat and allow to cool.
  3. Place the beef, eggs, bread crumbs, Worcestershire, milk, mustard, thyme, salt, and pepper in a bowl.
  4. Add the cooled onion mixture and combine.
  5. Form into a meatloaf and brush on a layer of the ketchup glaze.
  6. Lay strips of bacon over the top.
  7. Smoke on REC TEC at 200ºF for 1 hour.
  8. Glaze the top of bacon with the rest of the ketchup glaze, turn grill up to 350ºF, and cook for approximately another hour or until internal temp. hits 160ºF.

    Gotta admit. Was a little Leary to make this. Who cooks meatloaf on a pellet smoker? I do! Everyone loves their own meatloaf, but nobody likes another. This was amazing. Did not have sriracha so I substituted Frank's hot sauce. I will cook again . Cook time 2.5hrs

    It was the first thing I ever made on my Bull and it's still my wifes favorite thing I have made! Only changes I made was half the milk and I use Ritz crackers instead of bread crumbs. I like to make a double batch and then make 4 loafs a little over 2 lbs each. When they're finished cooking I take three and foil wrap individually and put in freezer safe bags. Quick and easy meals for later. About 1 hour at 350 in the oven still wrapped in the foil straight from the freezer!

    I followed the recipe just as it is written except for leaving out the bell peppers. We just do not like them. But wow, probably the best meatloaf ever. So moist and full of flavor! One thing I will do different next time is to use a thinner cut of bacon. The stuff I had was REALLY thick. I needed to cook it a little longer than expected to get it done. But no negative effect on the meat. Just served dinner a bit later than planned. A bonus is that this makes a BIG meatloaf. Lots of leftovers!! This is a winner and will be made again and again.

    This meatloaf is amazing. I modified to make with stuffing instead of breadcrumbs because I had I thought already and followed the rest exactly. Amazing.

    First meatloaf on smoker. Excellent and the bourbon topping was good, not too sweet, not too Spicy. Even without a smoker the recipe would be a winner but the but of added smokiness, perfect.

    This recipe was solid. Really enjoyed! Tried it with two kinds of cheeses. I will make again with more of a hot mustard baste and less milk to make firmer.

    THe only deviation I made was using steel cut oats in lieu of the bread crumbs. Taste was awesome and done to perfection. The glaze was a hit even with the wife who does not do well with spicy or overly sweet things. This is a KEEPER.
