The REC TEC Smoker Box gives you the ability to smoke fish, cheese, jerky, sauces, spices, or even condiments.  With three stainless grates inside the chamber, space is never an issue.  You can even use the smoke box as a  warming area at the end of your cook to keep the smoke rolling until it is time to eat.  The stainless drip pan in the bottom of the Smoke Box flows into your existing drip bucket, making clean-up simple and easy.  It attaches to your RT-680 using the existing holes ensuring a care-free installation.

  1. Love smoking cheese and the extra cooking space.

    I am very happy with the cold smoker the, the one improvement I would suggest would be to have the ability to increase and decrease the intake to the cold smoker thereby giving more temperature control over the cold smoker ( I saw that this is a feature in other smokers with a cold smoker). Having said that, I love the ability to smoke cheese. I did 3 different styles of cheese pepper jack, swiss and cheddar. They were all a hit with friends and family. The key to cold smoking cheese is keeping temps at less than 90 degrees for long periods of time (3 to 4 hours). I used the smoke tube, did not even fire up the Rec Tec for this task. That worked great. I also love having the extra cooking space on a large cook out when cooking several things at once.


  2. Easy Smoker Box Smoked Salmon

    I love smoked salmon! Now that I have my Smoker Box I can make it and enjoy it as often as I want to.
    The Smoker Box attached easily to My RT-680 and is pretty much the easiest thing to use. I prepped my salmon overnight with dark brown sugar, salt, and pepper. Set the RT-680 to 180 degrees, the Smoker Box heated to around 130 degrees. Put the Salmon on the lower rack and smoked it for an hour and 45 minutes.
    The results were outstanding!!!

    Nicely built. Works great as a warmer or if cooking at higher temps it's will even get up around 300 on center rack. I have cooked some veggies, corn on the cob and bake beans in it.

    Used this when I did a pork butt, put two kinds of cheese it it for about three hours on the lower shelf, smoker set at 210, they were a little too smokey, maybe try just a couple of hours next time, but it woks great.

    I WAS A ROOKIE CHEESE SMOKER BUT NOT NOW! I Have used 3 times to smoke cheese and I use a cast iron skillet on second shelf filled with ice to keep the temp down and cold smoke on second shelf, Also, as it is 100 degrees out I occasionally open door to cool. Use with Ultimate blend chips and get great smoke at 180 degrees. Only problem is that the thermometers are reading about 20 degrees higher than actul...no biggie but it would be nice if they were accurate.

    Other reviews are correct, there is a 50 degree difference between the top and bottom rack. I usually see the bottom 100 degrees cooler than the main cooking chamber, top rack is 50 degrees cooler. I use a foil tray filled with ice to help keep the temp even lower when smoking soft cheeses (mozz). Most importantly, eliminates the need for a Cambro to rest your brisket after finishing the cook. Just vent, rewrap and pop into the cold smoker for 2-4 hours.

    There is approximate 100 degrees F difference between the bottom rack and the main cooking body. The top rack for the box is roughly 50 degrees hotter than the bottom rack of the box. The middle rack is somewhere in the middle. The bottom rack of the box is somewhat on the high end of the temperature to smoke cheese, the minimum temperature I got is about 75 degrees F on the bottom rack. Ideally, I wanted 60 degrees F, so 75 degrees F it is still a bit too hot. The smoked cheese still comes out quite flavorful but depending on the cheese's melting temperature, some cheese did melt or change its shape with this temperature range.

    I wanted a cold smoker but wasn't sold on the traeger. I called the guys up at rec tec and the helped me decide to try and use theirs even sent me a rubbing or ( rough diagram) of their grill to compare to my traeger. I ordered it and it fit almost perfectly Performance wise I cold not be happier! It added a lot of extra space to my grill ( lil Tex )

    Haven't used the box much, yet. Need to calibrate the two temp gauges and get approx temp for middle rack. Looks totally cool. Anticipating smoked cheese in the cooler months (hot in Vegas right now). Smoking with the big boy currently and having way too much fun.

    I have a particular interest in cold smoking so I bought the smoker box with the grill. The assembly was easy. Like the grill the obvious quality and craftsmanship of the smoking box is quite evident. It even has two thermometers on the door one up high and on low in the smoking box. This is quite handy as the temperature is lower in the lower part of the box due to the convection current from the main smoker to the smoker box exhaust. If you want to cold smoke I would advise you to add this to your order.

    I really wasn't sure that I wanted to spend the extra money on the cold smoker box. After some mild persuasion by Matt the salesman, I went ahead and added it to my purchase. Sure glad I listened to Matt because I'm very pleased with my purchase. I love to use the cold smoker box to keep side dishes (beans, mac & cheese, etc) going while the main course is smoking away in the main smoker. I love the surprise on dinner guests faces when I pull a complete 3 course meal out of the Rec Tec. Don't regret not getting the cold smoker box, go ahead and add one to your order!

    This addition is a neat and great way to expand your grilling experience.
    I have smoked salt and cheese, gave them away and was very well received and appreciated. They all were in awe how great they tasted.
    If you can afford the extra cost it's well worth it.

    this is a must have addon for the RT680 its allows for great cold smoking and also makes a great warmer to keep food hot and ready for the masses. i have large family so this is great to make and keep meat and sides warm till everyone is ready to eat, and worked great to smoke salmon to make salmon balls they came out great and everyone wanted to know how it was smoked just told them on my new REC TEC in my cold smoker box they all said it was the best they ever had

    I rated this a 4 star due to I only used once in two cooks. While cooking ribs in main cooking chamber I did bagged French fries on top rack and kept beans warm on middle rack in cold smoker box. The smoke flavor was great and adds a great look to the RT-680. Cant wait to smoke fish , cheese and what ever comes up on the menu. I did have a bad temp gage during shipment. Called RecTec and in just a few days got a replacement. Awesome customer service, a 5 star.

    Great warming oven but heat variance between lower and upper racks is disturbing. For the price is still more warming slow cooking real estate. Small fan to distribute and even temp out helps turns out excellent cheese, fish and bacon so far!

    This is a quality attachment for the 680. It really increases the versatility when cooking. I've used it to cold smoke cheese and as a warmer.

    It's sturdy and is powder coated inside and out for longevity. I had one small issue with poorly illustrated drawings that was easily handled with a quick call to customer service.

    It is a great addition that doesn't affect the operation of the main smoker.
    This works great, when I can use it, I can only use it in ambient temps of less than 65 degrees. which rules out most of the year in the deserts of the southwest. :(
    Try alder wood smoked pepper jack.....MMMMMMMM

    I ordered the Cold Smoker Box in late December, just before Christmas. It still arrived on time during the holiday shipping season. After curing the box, my first try was some cheese. It is still aging in zip lock bags and should be ready in a few more days. I slow cooked a turkey breast and smoked the cheese at the same time. It is very efficient. A great product I highly recommend.

    I received my cold smoker attachment just before Christmas. Assembly to the Rec Tec was quick, simple, and solid. It adds about 13" to the overall width of the grill and moves the smoke stack to the rear of the cold smoker.

    I smoked my first batch of cheese and it was well received by all.

    Just put it on and smoked some cheese. It turned out great. The one warning is to put softer cheeses (Brick cheese in this case) on the lower rack as far away from heat as you can.

    Bought the cold smoke box to smoke our dried beef in and cheese. Did our first batch last week. Came out great!
    If anyone wants to try dried beef like the old farmers made years ago here's the recipe. This is for 25 lbs of eye of the round or deer roast. 28 oz. salt 14 oz. brown sugar 1.25 gal. Water. Put water salt and brown sugar in pot boil till sugar is dissolved. Let cool pour over roasts in clean 5 gallon bucket or crock if you have one. Put in frig for 14 days stirring them every two days. Take out on day 14 put in smoker box with hickory cold smoke for 4-6 hours. Take out and hang up until the meat is as dry as you want. It will not spoil it is salt cured. Slice thin put on homemade bread and butter enjoy!!

    I loaded the Rec Tec grill with a big turkey for Thanksgiving and placed two turkey breasts into the Smoker box. The turkey and the breasts were finished about the same time and both tasted really good. I have also placed cheese in the Smoker to add some additional flavor. Looking forward to trying other food - it is fun to experiment . Great purchase and addition to the grill.

    The cold smoker box is a great addition to the RT680. I was looking to fabricate a cold smoker for my RecTec. Fortunately, the wife discovered this addition. Easy installation and it makes the whole grill look badass. I've done several blocks of cheese and they've come out fantastic. Must have addition to your grill.

    Have not used it a lot yet, but have smoked cheese and chicken in new cold smoker. Both were very good, cheese was excellent. Cheese was done on bottom shelf and on a 50 degree night which will be a necessity or cheese will melt. Cant wait to smoke jerky, boudin, and summer sausage. Great smoker

    This Cold Smoker is very well made and attaches to the RT-680 very nicely. I've only had this product for two weeks, but I smoked sausage in the cold box while smoking Brisket in the main section of the RT-680. The Cold Box has two thermometers. One for the upper section and one for the lower section.
    I place two smoke tubes in the cold smoker to smoke all my food dishes in the cold box for an hour or so before transferring food to the RT-680 for cooking. I liked this unit so much I bought a second one for my Son to add to his RT-680. I would recommend this product to anyone.

    Works really well for smoking fish, cheese, meat, and other possibilities.

    Couple of install hints. First, this is a two person job. Someone needs to hold the unit up against the grill while hardware is attached.

    Second, the circular piece of hardware is a backing plate that is placed inside the grill behind the two upper bolts. The instructions look like it should be installed between the smoker and grill.

    I know the box is used for multiple applications, such as fish and cheese, but I haven't gone that far yet. I mainly use it as a bread warmer, and it helps when cooking steaks at different "doneness", but that's as far as I got.

    The cold smoke box is a great add on to the Rec Tec smoker. The upper shelves can provide additional smoking area at a temp that is just below the set point. The lower shelves provide a lower temp for colder smoking. As I type, I am smoking salmon. I can't wait to to taste it!

    Would of gave it 5 stars. Only reason I gave it 4 stars was because I smoked cheese at 90 degrees. So I have to leave door a lil open to keep it at 90 degrees. Other than that the cheese is so so good. Week later after its rested. Wife and I break out some wine and have some smoked cheese and crackers. Friends who tried the cheese are having me smoked cheese for them now.

    This is almost a no brainer. If you are springing for the best with a 680 smoker, go ahead and get he smoker box too. You won't regret it. Very well made. Excellent place to keep things warm.

    If you have grill loaded and run out of space, use top shelf for extra cooking, we have done jalapeno poppers, corn on the cob, and middle and bottom work great for keeping things warm and middle works great for mac and cheese.

    Cold smoking salmon and cheese is amazing! The cold smoker is quality built, looks great and opens up even more opportunities for making the best tasting foods you can imagine. We used my wife's cast iron cornbread mold to hold blocks of Pepper Jack, Monterey Jack and Sharp Cheddar. It worked out really well first to get an incredible smoky flavor no grocery store cheese could ever have, but also for sharing some with neighbors and family. The cheddar is the best. So far the only cheese we have tried that we would not do again was swiss

    Bought this accessory for the purpose of both being able to do some cold smoke action and also to use as a warming or slow reheating tray for things like ribs or a brisket over the course of the cookout. So far it has not disappointed. High quality build and a good range of temperature. Couldnt ask for a much more than that. I would definitely recommend it to those considering.

    Glad to see the guys at rectec continuing to innovate. Cold smoker is very sturdy and well constructed. Connect smoker with a buddy, it's bigger than you think. The smoker box hold temps very well, top and middle seem to be around 50 degrees lower than main chamber and bottom rack is about 100 degrees lower than main. Smoked salmon and jerky all have been amazing. Lots of space and looks great attached. Now I need a new cover as the grill is much larger. Get the new second shelf (as I have) and you'll have an unstoppable beast!

    I really only use the box for warming or preheating items for large cooks. Works wonderfully for this purpose.

    The top rack is noticeably hotter than the bottom racks.

    Have made jerky once at a low temperature and this worked great, Was easy to manage a lower temp then the 680 in the cold smoke box.

    Build quality is top notch just like the 680. Install was a breeze.

    One con i noticed was water build up in the bottom of the door from moisture in the cook. This can be solved by possibly drilling a hole in the bottom flange of the door.

    Like the Grill, this product is built the exact same way "Quality". I was very pleased when I opened the box and the smoker box was build the exact same way the rest of the grill was. If you already own the 680 do yourself a favor and buy this cold smoker box before the price goes up, as it is grossly under priced in my opinion. It was very east to install and complements the Grill. Having all that extra rack space is awesome to. You will not be disappointment in this addition to your grilling options.

    Great product I just wish the smoker stack was either taller or more offset. On the main grill I did two pork butts, a bunch of chicken legs. Then in the cold smoker I did two salmon fillets and kept the chicken warm when it was done. I noticed when I was done with my Cook that there was drippings all over the cold smoker from the stack.

    As of today- I just use it to keep the sides warm. As I am monitoring the temps and looks like it will work for my low temp (cold) smoked bacon and salmon...soon to be tested. Visually - awesome...few envious friends.

    So I got my new cold smoke box in a few weeks ago, installed it myself rather easily although it would be easier with a friend. Had it up & running in about 1/2 an hour. I ran the temp up to 450 to season it, then tried my first attempt at cold smoke. I started with some sharp Cheddar blocks. I didn't want to waste the heat in the cook chamber so i decided since it was around 45 degrees outside, I'd through some ribs on too. Turned out with the Rec Tec at 225, I was still able to keep the smoke chamber under 90 degrees and make ribs at the same time, win, win. The ribs were amazing as always but I let the cheese age for a week. When that time went by, I cracked open the cheese and to my amazement, the cheese was outstanding, best cheddar I have ever had. Now I have done a pork belly and had the same results, the best damn bacon I've ever sunk my teeth into. Considering the amazing price on this lil addition and all you will get out of it, this is an incredible value. If you don't have one yet, I highly recommend you expand your skills and get one now.

    I love my new grill ive had an antique treger for years and it finally rusted apart so I went to hunting a new grill I looked at the new tragers and read reviews on many others after a lot of head scratchin I was sold on the stainless internal parts ive used it almost everyday for a month no troubles just a little getting used too ive cooked ribs, chops, pork butt, venision backstrap, steaks jerky bisquites everything is flippin awesome I also purchased the cold smoker im not sure about this yet I got it for cheese with the smoker as low as I could get it the top side of the cold smoker was to hot for the cheese and on the bottom side it was cold enough but not nearly as much smoke there gona take some trial and error with that had the same trouble in reverse with jerky I also really enjoy the youtube videos ive used them a bunch too help learn the grill thanks for a great product.

    I recently received my cold smoker 7 was excited to put it to use, problem was, I needed to make 3 racks of ribs too. Turns out with an air temp of 54 degrees, I was able to do both at the same time. I smoked 4 blocks of sharp cheddar as well as smoked 3 racks of ribs. the smoke chamber stayed right at 90 degrees on the lower rack, 110 on the upper rack & 225 in the smoker. I had to let the cheese age for a week, that was tough, but worth it in the end. The cheese was the finest smoked sharp Cheddar I've ever had & as always, the ribs were awesome. I'm on to other cold smoke things now, doing research on sausage now. This is a fun aspect of pellet cooking, looking forward to the future of this awesome addition. (a little note, if your smoker is in the sun, put a light colored towel over it if you need to bring the temp down or just take it out of the sun.     The cold smoker box is under the Christmas tree, but the cold smoker was installed right away. Install was easy, there is a 6 inch round metal flange that bolts to the inside of the main smoker (that was not in the directions).

    My first smoke with the new cold smoker attached was brisket and pork butt in the main smoker and jerkey on the top shelf ,salmon on the middle shelf and cheese on the bottom shelf of the cold smoker.
    AWESOME is all in can say.
